
A couple of years ago my husband came across a peanut butter protein ball recipe that was floating around on Facebook. We loved the recipe and made it quite often, not only for ourselves but when our middle child was in 0 percentile for weight and needed gains, too.
Naturally, we get tired of eating the same old stuff. I came up with this recipe as I longed for a different protein ball recipe. We had forgotten to cancel our auto-ship and had an overabundance of strawberry protein powder.
Strawberry Protein Balls
Ingredients:
1/2cup almond butter
1/4cup honey
1 scoop Strawberry protein powder
1/2 cup quick oats
Freeze dried strawberries, crumbled
1. Mix almond butter and honey in a medium sized bowl. Microwaving for 30 seconds helps to soften the almond butter and makes for easier mixing.
2. Stir the protein powder into the almond butter/honey mixture.
3. Stir in the instant oats and 1-2 tablespoons of freeze dried strawberries.
4. Form this mixture into balls.
For this recipe I stored them in an airtight container in the refrigerator.
